Whole 30 food diary

Posting this for myself.

Day 1:

Breakfast - 2 egg omelette with bell peppers and mushrooms,  8 oz freshly juiced carrots
Lunch - 2 ounces chicken breast, one avocado, 1/4 cup unsalted cashews
Dinner - Wes made Halibut with a spritz of olive oil and seasoning, baked mushrooms and squash

Day 2:

Breakfast - same as Day 1, added onions to omelette for more flavor
Lunch - Wes made homemade chicken soup with cauliflower, corn, celery, carrots - he made a huge pot so this will be my lunch every day for a while
Dinner - baked tilapia (prepared same as halibut from Day 1) and green peas
Snack - cashews, 8 ounces of coconut water

Day 3:

Breakfast - same as Day 1, minus the carrot juice - coconut water
Lunch - leftover tilapia and peas, which Julie informed me are illegal on this diet - no legumes
Dinner - chicken veggie soup, sautéed shrimp in Tony's and olive oil
Snack - 1/4 cup cashews, 1/4 cup sunflower seeds

Day 4 -

Breakfast - 2 egg omelette with shrimp and tomatoes added, 1/2 avocado, raspberries, orange juice
Lunch - Chicken veggie soup, 1/4 cup cashews, coconut water
Dinner - Baked sweet potato slices, avocado mash, tomato - this was so yummy!  I'll be making this a lot.



Day 5 -

Breakfast - sweet potato toast with avocado and a fried egg
Lunch - chicken veggie soup
Dinner - Sauteed shrimp in ghee and Tony's, asparagus, cauliflower and green beans




Day 6 and 7 - 

Wes and I decided to do a juice cleanse.  Luckily, it fits in to the Whole 30 protocol so I'm doing it with him.  Turns out, we only make it two days instead of three.  But Wes had something major come up at work and I needed some energy for a busy Monday morning.  But this is what our weekend looked like - 6 juices a day.



We drank the green juice twice a day, and I actually like it!  In fact, I'm sipping one right now, days after we finished our juice weekend.    Check out all the green goodness that you get...





My favorite drink was the pineapple, apple and fresh mint.  YUM!!!!!!!



Day 8 -

Breakfast - green juice

Lunch - egg omelette, half avocado

Dinner -  Trying out my new spiralizer/veggetti - turns zucchini, squash, cucumbers into noodle shape - First, check out my first garden goodies:



Not much, but WOW, veggies from your own garden taste SO much better.

I spiraled the cucumber, chopped the tomatoes, added some rice vinegar and had a delicious cold salad.  Then I spiralized the squash, sautéed it in olive oil, and topped it with crushed, sautéed tomatoes.  It was delicious!!!  No more pasta for me this month!!  Squash was a welcome substitute.  And squash is one of my least favorite vegetables, by the way.






Day 9 -

Breakfast - omelette, half avocado
Lunch - quinoa (not whole 30 legal, but it's natural and healthy so I'm eating it!) avocado and tomatoes
Dinner -can't remember

OK, all the days are running together now.  So I'll just post things I really liked for future use.

I made a proper marinara sauce, using ground turkey, mushrooms, onions, garlic, and whole plum tomatoes.  Served it over sautéed zucchini and it was delicious.

Reese loves taking pictures with our iPad mini.  While we were on the plane, she snapped a few pictures.  Today, she grabbed the iPad off the kitchen table and took a ton of pictures.  It was fun to look through them to see her perspective.

Whole 30

Soooooo, my eating habits have gotten out of control.   I'm drinking several Cokes a day, eating tons of junk food and inhaling candy at bedtime.  So I cleaned out my bed-side drawer (reese's cups, reese's pieces, mini hershey bars, kit kats, lemon heads, PEZ and twizzlers - NO JOKE) and decided to make a change.  I thought about doing a 3 day juice diet, but The Whole 30 Diet kept catching my eye.  So I started yesterday and am excited to see how long I can make it.  Whole 30 cuts out all the junk - no soda, candy, sugar, processed food, no dairy, no gluten - the key word is whole.  There are a million blogs of people who have completed the diet and shared all their meal plans so there is plenty of help in that department.  Here are my 2 days so far:  (keeping this log for my personal use, feel free to skip over)

Day 1:

Luckily, I'm not feeling lethargic like some people do after cutting sugar cold turkey.   I definitely miss the habit of snacking in bed as I watch TV/work on my computer.  I am also craving a coke, but I'm not gonna do it!!!!!   I have the house stocked with healthy foods so there is no excuse to cheat.  I'm not traveling the next few weeks (except for a quick trip to Houston) so I hope to be successful.  My cousin Lindsay just finished this diet - she lost ten pounds and feels great.  Weight loss isn't my main goal but I hope to lose a few pounds...I'm at my heaviest, 140 pounds.  And all the extra fat is in my tummy.  No two piece for me yet!!!  My main goal is to see if it helps my fatigue.   I just got another round of thyroid results and they are all messed up again.  Medication isn't really working for me right now so I'll be curious to see if a healthy diet does the trick.

Wish me luck!  Thank goodness Easter is FAR away - Mini Eggs and Cadbury Eggs are my favorite!!!!!!!!!

KK's wedding!!!

***Jill, I haven't forgotten about your wedding!  I am still organizing pictures from Wes's phone and my phone to complete my post.  Coming soon....***

Reese and I got up at 3:30 am (eek!) on Friday to catch a plane to Buffalo, New York.  Reese popped out of bed when I woke her up - "Time to go to KK's wedding?"  She's been talking about it constantly the past few weeks.  The flight was uneventful - we stopped in Baltimore but didn't have to deplane so that made it easier.  Reese took a backpack full of goodies to keep her busy.  But she spent most of her time talking to anyone who would listen.  She made friends with all the flight attendants and when the plane landed, they took her to the cockpit to meet the pilot.





Reese took a much needed nap - wish I had gotten one, too!!








We stayed at a hotel in downtown Buffalo.  We had a few hours to kill before heading out to KK's rehearsal dinner so we hopped on the trolley and went to find a place to eat lunch.

It was so nice to finally meet all of KK's family.  As I type this, I can't believe I didn't get a picture of her parents or brothers.  Once she gets her professional pictures, I'll share a photo so you can "meet" her family.  Reese was extremely worn out after a long day so we headed back to the hotel after dinner.

Saturday morning - we needed to be at the lake for pre-wedding pictures by 2:00.   Time to head to Niagara Falls!!!!  I've heard the Canadian side has better views, but I wasn't sure how long it would take to cross the border two times.  So we headed to the US side, which was only 30 minutes from our hotel.  Luckily, the sun was shining and the views were spectacular!





We grabbed lunch, put on Reese's sparkly dress and headed to the lake.  Reese grabbed a cat nap on the way.
